This week's trade meal is Macaroni Cheese. Not from the box, but not my Home Chef version either. Starting with a simple roux, then white sauce, add the cheese and voila. Neither the recipe nor mine even had bread crumbs (gasp!). But the bottom line is, the kids' loved it, and I don't always consider them, but this week, I did.
Favorite's Macaroni & Cheese
1 pound elbow macaroni
1/4 cup butter
4 Tablespoons flour
2 cups milk
1/2 tsp salt
1/4 tsp pepper
1/2 tsp dry mustard
3+ cups grated cheddar cheese (I did half sharp & half medium)
Cook macaroni, drain. In a large saucepan, melt butter. Add flour and stir (this is the "roux"). Pour in milk and cook, stirring constantly, until thick ("white cream sauce"). Add salt, pepper, & dry mustard, then add 2 1/2 cups of the cheese and stir until cheese has melted. Remove from heat and add macaroni and mix together. Pour into 9"X13" baking pan, sprinkle remaining 1/2 cup cheese on top and bake at 350 degrees for 30 minutes.
